..........Baked pineapple!
Another Tastespotting adventure. Perfect for the bridal shower I attended yesterday.
Baked Pineapple
20 oz. crushed pineapple
1/2 cup sugar
2 Tbsp cornstarch
1 tsp vanilla
2 eggs, beaten
Mix all ingredients and spread in 1.5 quart dish. Sprinkle with cinnamon and bake at 350° for 1 hour.
The only change I would make is a dash of cinnamon in the mix itself. Maybe a little more on top. I mean really, how can you go wrong with cinnamon flavor?
